Pollo Relleno – stuffed pan roasted airline chicken breast; jamón Serrano, dates, mozzarella cheese,
sherry gastrique, roasted fingerling potatoes, wilted spinach
Pescado Rojo – pan seared red fish; spiced coconut sauce, wild rice pilaf
Bolso Vegetal de Invierno – winter vegetable purse; carrots, squash, peppers, onions,
celery root, roasted piquillo pepper purée
Course 3
Holjaldre de Crema – chocolate mousse filled cream puff; Oreo crumbs
Calabaza Confitada – candied butternut squash; walnut crumble, vanilla ice cream
Crema – brûléed Catalan spiced custard; pineapple ring
